Savor Cuenca Bacon Nachos
Two of my favorite things are bacon (specifically the artisanal bacon made by Carolina Smokehouse here in Cuenca) and Nachos (for the best Nachos it is imperative that you use REAL freshly made corn tortilla chips from Maix here in Cuenca). I started thinking that bacon nachos would be a great addition to my snack repertoire so I developed the following recipe. Truth be told, I actually modified a recipe that I already used. If you are asking if microwaving these instead of using the oven would work…don’t even think about it – the oven is the only way to go and you will be happy you took the extra time to bake them instead of nuke them.
1⁄2 – 1 lb. of Carolina Smokehouse artisan bacon, cooked and crumbled
1⁄2-3⁄4 cup red onion, chopped
1 medium tomato chopped
3 oz. sliced black olives (optional)
6 -7 jalapeno peppers, seeded and chopped (Available from Linda Chase)
2 1⁄2 cups Mexican blend cheese (Available at SuperMaxi)
9 ounces Maix Corn Tortilla Chips
Preheat oven to 220 C or 425 F.
Line a baking sheet with aluminum foil.
Spread 4 oz. of Maix Corn Tortilla Chips over the foil (enough to cover the entire cookie sheet).
Sprinkle with half the Carolina Smokehouse bacon, onion, peppers and 1 cup of cheese.
Spread the remaining 1/2 Maix Corn Tortilla Chips on top.
Top with the remaining Carolina Smokehouse bacon, onion, peppers, olives and tomatoes.
Top with 1 1/2 cup remaining cheese.
Bake for 5-10 minutes or until the cheese is melted and slightly browned.
